Pumpkin Pie Smoothie
- 3/4-1 cup coconut milk
- 1/2 can organic pumpkin puree (about a cup)
- 1 frozen banana
- large handful of spinach
- 1/2 a small avocado
- 1-3 dates, depending on how sweet you like
- 4 apricot kernels
- 2 t. ground cinnamon
- 1 t. ground ginger
- 1/4 t. ground nutmeg
- 1/4 t. ground clove
- unsweetened coconut flakes for added flavor and texture (optional)
Toss all items (aside from coconut flakes, if using) into a high speed blender. Blend until smooth. Reduce speed and add in coconut flakes, just until incorporated.
