Creamsicle Chia Pudding
(makes 4 servings)
- 1 can coconut milk
- 1 1/4 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lemon juice
- 1/2 cup chia seeds
- 1-3 tablespoons of pure maple syrup (I used 1 because my oranges were very sweet)
- 1 teaspoon pure vanilla extract
- 1-2 drops orange essential oil (optional but really enhances orange flavor. If using be sure it is high quality, pure, therapeutic grade, such as Young Living)
Mix coconut milk, orange and lemon juice, essential oil (if using), and maple syrup until coconut cream is broken up and well combined. Stir in chia seeds. Let mixture sit for about 5 minutes. Stir once more and distribute into serving dishes. Refrigerate at least 2 hours. This should keep in the refrigerator for 5 days without going bad.
